What makes Toriyama Umami Wagyu so outstanding is its striking umami, rich flavor, and amazing balance of lean and fat.
When I had my first bite of Toriyama Umami Wagyu (TUW), I was amazed. I have eaten various premium wagyu from prefectures like Hokkaido and Miyazaki. It was different from any wagyu beef I have had before. The umami of TUW has a distinct, rich flavor owing to the balance of lean meat and fat, thus putting the flavor to the next level.

A visit to Toriyama Farm located in Gunma, Japan, gave an insight into what makes TUW different from any other wagyu. The farmers take great effort and care into raising the cattle, ensuring the cattle are living in a relaxed and comfortable environment. In addition, Toriyama and his team took 20 years of research and development to eliminate inconsistencies in the quality of TUW.

Therefore, when creating new TUW dishes, a balance of sweetness, saltiness and umami ingredients is essential so as not to overpower the natural umami flavor of TUW.

After graduating from culinary school, Australia-born Paul Gajewski began his career at the well-known Melbourne restaurant Vue de monde. He then served as chef at NOMA in Copenhagen, Denmark, fine dining restaurants Guy Savory and L’Atelier in Paris, and Tippling Club in Singapore. He became head chef at Tippling Club at 26, which was selected as one of “Asia’s 50 Best Restaurants” in 2014. Gajewski has been at New York Grill since November 2019. Ever-striving for simplicity and possessing a passion for cooking, he strives to provide exciting and moving dining experiences.
